If you look around, you can find chocolate or baked bunnies, eggs and lots of lamb recipes everywhere at Easter. This year it should be an Easter recipe that does not only refer to it. So why not a cocktail? Since I like to enjoy a good drink occasionally, but not always alcoholic, I prefer to drink less, and just mix myself a nice non-alcoholic mocktail occasionally. No wonder that mocktails are so popular, they are now in no way inferior to the taste of alcoholic cocktails. But we were still at Easter, and so I have created this delicious mocktail, called “The Green Rabbit” for you.
Non-alcoholic spirits from Seedlip
A few days ago, I received a very exciting package, it was supposed to be two bottles of distilled non-alcoholic spirits from Seedlip. Yes, I know what you are thinking, again some cool urban stuff that is supposed to show us a different direction, but to be honest, this time I was curious. The look of the bottle doesn’t promise anything that the inside can’t justify. The smell of the Garden variant was very green and enticing, so I could already imagine some refreshing herbal combinations, while the Spice variant made my thoughts go towards coffee and chocolate. In the end, two flavors to keep in mind for some non-alcoholic enjoyment in mocktails.
Mocktail with Carrot and Cucumber
Usually this is a time when there are lots of family gatherings, brunches, lunches and dinners. There’s a lot of food and even more wine, but it also ends up being exhausting. My Easter Mocktail gives you the opportunity to refresh yourself completely alcohol-free from time to time and while experiencing the full flavor of herbs, carrot and cucumber. One sip will make the world around you green and bright, like spring in a glass. The mocktail is as simple as it gets. Just save the greens of a few carrots and mix with Seedlip. Top it off with a good tonic water, some cucumber and you’re done. The taste and decoration will delight not only Easter bunnies, but also everyone else around you.

The Green Rabbit Easter Mocktail
2 Persons10 Minutes
The Green Rabbit
- 100 ml Seedlip Garden
- 10 g Carrot Greens (leaves only)
- 1 cl Lemon Juice
- 20 g Agave Syrup
For the mocktail, mix Seedlip Garden, carrot greens, lemon juice and agave syrup in a blender until it turns green. Everything is then strained through a fine sieve and placed in the refrigerator until ready to serve.
- 350 ml Tonic Water
- 2 Cucumber Slices
- 1 Carrot (peeled and halved)
- 2 Carrot Green Stems
To serve, arrange one cucumber slice in each of two glasses, fill with ice cubes and pour the green mix on top. Now top up with tonic water and garnish each with half a carrot and carrot greens.
