Who of us does not know the horrible feeling after a good night out? Everything has been such a laugh and you have been enjoying yourself with good company and a glass or maybe a few more. Now you open your eyes the next morning, your mouth is dry, your head hurts and everything is just to much. Well, then a good hangover spoils the whole day or even more. What happened is, that alcohol drained all minerals out of your body and you are lacking fluids. The good thing is, there are certain things one can do to prevent a bad hangover or in the case of having one already, you can work your way out of it with a few tasty dishes.

How To Prevent?

Well, I could be super clever and tell you “do not drink as much or at all” but since I am enjoying a good wine or drink every now and then myself, there are a few easy things to keep in mind. So, assuming you know there might be a few glasses tonight, make sure to have eaten propperly prior going out. Best thing to eat is some fatty food, combined with salt and proteins. This could be bacon & eggs for instance and these ingredients will help your body to slow down the process of taking up alcohol in your blood system. Also make sure to follow an easy rule of thumb: 1 drink followed by a glass of water and maybe some salty snacks. This helps to stay hydrated as alcohol will dehydrate you.

What To Eat?

If you might have been pushing your bodies limits and could not prevent a hangover, you can try to fill up your batteries with some of my following recipes. The major thing to do is to drink water and to fill up minerals. Your body will need all sorts of them as alcohol drains them out of your body quite fast and leaves you in a state of a sometimes painful hangover. So proteins, calcium, sugar, iodine & vitamins are the ones you are aiming for in your breakfast. I know, some kinds of food will just not feel right (you got to listen to your body) and therefore came up with an easy to drink breakfast like my sorrel & spelt smoothie, followed by a tasty amaranth bowl and for those of you only having headaches a good rhubarb ceviche. All of these recipes will help you to get back on track and are full of the ingredients your body needs.

Sorrel & Spelt Smoothie

For 2 Persons

Ingredients

1/2 Avocado
1 Banana
70 g Sorrel
50 g Baby Spinach
30 g Spelled Flakes
250 ml Water
Agave Syrup, Lemon Peel & Salt to flavor

Peel the banana and avocado and blend with all remaining ingredients until smooth. Flavor with the spices to your gusto and blend again.

Amaranth Bowl

For 2 Persons

Ingredients

50 g Popped Amaranth
1 tbsp Honey
1 tbsp Agave Syrup
Salt to flavor

200 g Yoghurt
1/4 Orange Peel & Juice

Combine amaranth with honey and agave syrup and roast it on a baking sheet at 170°C until golden-brown. Leave aside to cool down until serving. Now mix the yoghurt with orange peel and juice.

Serving

40 g Mixed Nuts
40 g Dried Apricots
60 g Frozen Raspberries
Fresh Mint

To serve, put roasted amaranth and yoghurt in a bowl. Then chop up the nuts and apricots and add them too. To finish, arrange the raspberries on top and decorate with fresh mint leaves.

Rhubarb Ceviche

For 2 Persons

Ingredients

250 g Fresh Cod (Seabass, Bream or Kingfish would be fine too)
1 Lime Juice & Peel
2 tbsp Olive Oil
70 g Rhubarb
5 Coriander Stems
2 Parsley Stems
Salt, Pepper, Chili Flakes & Agave Syrup to flavor

Dice the deboned fish and cut the peeled rhubarb in thin slices. Chop up the herbs and combine all ingredients in a bowl. Leave to flavor for 10 minutes and serve everything on a deep plate with the juice on top.

Sauerampfer-Dinkel Smoothie

Für 2 Personen

Zutaten

1/2 Avocado
1 Banane
70 g Sauerampfer
50 g Babyspinat
30 g Dinkelflocken
250 ml Wasser
Agavensirup, Zitronenabrieb & Salz nach Geschmack

Die Banane und Avocado schälen und mit den restlichen Zutaten im Blender mixen. Nun nochmals nachschmecken und erneut mixen.

Amaranth Schüssel

Für 2 Personen

Zutaten

50 g Gepopptes Amaranth
1 EL Honig
1 EL Agavensirup
Salz nach Geschmack

200 g Joghurt
1/4 Orange Abrieb & Saft

Amaranth mit Honig und Agavensirup vermengen und bei 170°C auf einem Backblech gold-braun karamellisieren. Dann zum abkühlen bis zum servieren beiseite stellen. Nun den Joghurt mit Orangenabrieb und Saft vermengen.

Servieren

40 g Nussmix
40 g Getrocknete Aprikosen
60 g Gefrorene Himbeeren
Frische Minze

Zum Servieren, Amaranth und Joghurt in eine Schüssel geben. Dann die Nüsse und Aprikosen grob hacken und ebenfalls dazugeben. Zum Schluss die Himbeeren anrichten und mit der frischen Minze garnieren.

Rhabarber Ceviche

Für 2 Personen

Zutaten

250 g Frischer Kabeljau (Wolfsbarsch, Dorade oder Königsmakrele eignen sich auch sehr gut)
1 Limette Abrieb & Saft
2 EL Olivenöl
70 g Rhabarber
5 Korianderstengel
2 Petersilienstengel
Salz, Pfeffer, Chiliflocken & Agavensirup nach Geschmack

Den entgräteten Kabeljau in Würfel und den geschälten Rhabarber in dünne Scheiben schneiden. Die Kräuter hacken und nun alle Zutaten in einer Schüssel für 10 Minuten marinieren. Danach erneut abschmecken, in einem tiefen Teller anrichten und den Saft darüber geben.
